Measuring grated Parmesan cheese by cup and by weight
Finely grated Parmesan weighs about 100 g per cup. It is lighter than cheddar because the fine, dry shreds are fluffy, and a microplaned cup weighs less again than a cup from a box grater. Shaker-can "parmesan" is drier and lighter still. For sauces, weigh the cheese instead of measuring it in cups so the sauce comes out equally salty and creamy every time.
